NW Smoked Salmon Poke Salad
The Hawaiian dish, Poke, is the newest food sensation making waves in Portland. The area has seen a significant increase in the Native Hawaiian and Pacific Islander populations over the past two years. In recognition of this growing community and the iconic Pacific Northwest salmon, Chefs Jessica Boisture and Michael Waterman have collaborated to create a unique poke salad.
The Northwest Smoked Salmon Poke Salad offers a vibrant mix of refreshing greens including delicious cucumber and wake salad, accompanied by a variety of pickled ginger, sesame seeds, and green onion.
Ingredients
3 oz. mixed greens |
3 oz. NW smoked salmon |
1 oz. edamame (see below recipe) |
1 oz. pickled red onions (see below recipe) |
1 oz. Wakame salad (buy out) |
1/2 oz. pickled ginger (buy out) |
1 oz. cucumber (chopped) |
0.15 oz. green onion (chopped) |
0.15 oz. sesame seeds (black and white mix) |
1 1/2 oz. Poke dressing (see below recipe) |
Directions
POKE DRESSING
- Tahini paste, 2 cups
- Tamari, 2 cups
- Rice win vinegar, 1.25 cups
- Sesame oil, 1 cup
- Wasabi powder, 2 tsp
PICKLED RED ONIONS
- Red Onions, 25 lbs.
- Red Win Vinegar, 1 gallon
- Water, 2 qts.
- Granulated sugar, 5 cups
- Salt, .67 cups
EDAMAME
- Edamame, 1 (12 oz.) bag
- Sesame oil, 2 oz.
- Rice wine vinegar, 1 oz.
- Salt to taste
- Pepper to taste
